Amazingly Delicious Recipe

My Valentine and I tried a new recipe, which was definitely the best meal I have devoured in quite some time. It was so tasty, I just have to share it!

Curried Ravioli with Spinach

1 pkg. (9oz) refrigerated cheese-filled ravioli

1 box (9oz) frozen spinach

2 oz. cream cheese, softened

2/3 cup canned coconut milk

1/3 cup vegetable broth

3/4 tsp. curry powder

1/4 tsp. salt

3 medium green onions, sliced (1/3 cup)

1/4 cup chopped peanuts

1. Cook and drain ravioli as directed on package. Cook & drain spinach as directed on box.

2. In 1-qt. saucepan, mix cream cheese, coconut milk, broth, curry powder and salt. Cook over medium heat, stirring occasionally, until hot.

3. Spoon spinach onto serving plate. Top with ravioli and sauce. Sprinkle with onions and peanuts.

* I also loved adding freshly ground red and black pepper for a little heat. YUM!

French Vanilla Super Premium Ice Cream

Frozen Blueberries or Berry Medley

Ground Millet Flax Seed with Blueberries. (Near the granola isle)
